I started running a baking studio in 2013 because it was so rewarding and fun to have a one-day class by chance. Since then, I graduated from the French confectionery school Le Cordon Bleu and have been running a studio and cafe:)

Did you know that the current confectionery trend is to use expensive molds for desserts with intense and colorful designs like fast fashion? On the contrary, I'm going to teach you how to avoid this kind of thing about baking, so that you can make desserts more practical.


The downside of being flashy is that you can quickly get tired of it. Learn about desserts that are simple yet continue to gain popularity. I'll show you how to avoid using expensive baking tools and use practical and inexpensive tools for baking. Also, I'll search for everything from sites where you can buy ingredients to an eye for finding good ingredients there. I always say this in offline baking classes.

1. Let's learn the basics step by step.

You'll understand butter creamization techniques and learn about frozen dough techniques and direct kneading techniques. From honey tips for molding cookie dough, how to freeze cookie dough, and how to make straight dough, we'll solve all the questions you've been wondering about while making cookies in a cool way.

2. The process of making desserts will be easier.

Through this class, the whole process of making desserts will be easier if you learn how to work with savoury and meringue. Other than that, I'm going to use the biggest job I can do by hand, sableys, and the process of powderizing butter and making it the size of a grain of sand in a variety of ways.

3. I will learn Italian meringue properly.

The fact that putting meringues lightly is not necessarily a good thing; to make a cake sheet with proper weight, you need a dense and heavy meringue rather than a light one. Learn in detail how to knead easily and when to mix with the dough.

4. It also contains a lot of detailed know-how.

You can make wonderful pastries by hand without a pie roller. I'll even make mille-feuille and egg tarts with hand-kneaded dough. Once you know how to see the timing and state of the dough, the whole process becomes easier. Also, you'll try making the most delicious egg tarts for crème patissiers, and learn how to freeze them and store them. Don't miss out on the mille-feuille process, which is carefully baked.

I'm always going to bake cookies.

Unthinkable things are happening to me after I got a job as a charming patissier. The fact that I worked at an airport but had never gone abroad, went to Paris, where I came across this job, to take classes in 2014! Since then, I've been there a number of times, and I've been recruiting over ten students since I couldn't get to know them alone.


Isn't it hard? Yes, it's hard. However, it's such a fascinating creative activity that I don't want to change anything about my daily routine. I still run the store and feed my customers, my family, my child, and my child's friends with handmade desserts, but in the future, even if my head is talking and my back is bent, I will gently walk into the kitchen and bake cookies to feed my granddaughter's grandchildren.
