Hallo I'm Kim Millan, and I've been working for 3 years at a Michelin 2-star restaurant in Milan, Italy. Thanks to the great reviews from many people in the previous class dealing with Italian home-cooked meals, I was able to open the second class. If you learned Italian home-cooked course meals in the first class In this class, I will focus more on Italian Primi Piatti.

Flowers of Italian cuisine

Primi Piatti

What is Primi Piatti?

Italian cuisine cannot be explained without Primi Piatti. It may seem difficult, but in fact, we know it very well It refers to dishes such as pasta, risotto, and gnocchi. It means that it comes out as the first dish in an Italian cooking course For Italians, it's like a home-cooked meal.

In this curriculum, I would like to introduce everything from dried noodle pasta, which we often encounter in our daily lives, to raw noodle pasta (including ravioli and gnocchi) made by kneading it yourself, and risotto using raw rice.

Learn from a Michelin-born chef

Over 30 local recipes

I'll teach you everything from the introduction to application of Italian cuisine using the know-how I've learned from the actual Michelin restaurant kitchens.. Experience the authentic taste of Italy at home while making all 36 recipes yourself. Of course! The curriculum will focus on materials that are easy to obtain in Korea.

Step 1. The base of flavor starts with broth and sauce

While making everything from basic broths using chicken, fish, and shellfish to tomato sauce, which will be used in future recipes, in advance Let's lay the foundation that forms the foundation of Italian cuisine.

Step 2. Learn the basics of pasta with dried noodles

Let's practice the technique of dry noodle mantecurry (an emulsification process where water and oil are combined together) so that the noodles and sauce don't play separately. Furthermore, I would like to develop various basic skills with high-quality pasta recipes from Italian restaurants.

Step 3. Making and cooking a variety of fresh pasta noodles

Let's make our own raw pasta using egg batter and water dough, and also make ravioli, an Italian dumpling. Compatibility with ingredients You'll learn how to maximize the flavor of raw noodles.

Step 4. Making gnocchi using potatoes

Start by making your own gnocchi dough and learn 5 different flavored recipes. Making potato gnocchi recipes that are popular in the mainland and Korea Immerse yourself in the charm of gnocchi.

step 5. Making a mainland-style risotto using raw rice

The flavor of risotto is determined by the broth. I'm going to make various kinds of broth and stew raw rice in the broth to make a deep-scented risotto. Try a risotto that is completely different from the risotto you've eaten before.

As a cooking process without editing

To make it easy to follow

If you followed the recipe on YouTube or blog, weren't you disappointed with the taste of the finished dish? That's because I missed the timing of adjusting the heat and the order in which the ingredients were added during the skipped cooking process. In this class, we will reveal all the cooking courses in their entirety without editing. It's like I'm cooking with all of you right next to me! Just follow along and you'll be able to enjoy a wonderful original Italian home-cooked meal right in front of you.

Hallo I'm Kim Mil-ran, who runs the YouTube channel Kim Mil-ran. I'm currently working at a 2 Michelin star restaurant in Milan, Italy, and it's thanks to pasta that I love pasta so much that I started cooking Italian cuisine.

I started my YouTube channel because I wanted to correct misknowledge and information about pasta, but undeservedly, it began to receive the attention and love of many people. Every time I watch a video on my YouTube channel and see a comment saying that the dish I made brought happiness to someone special, I feel really proud.

This is a great opportunity to share with you more detailed and detailed knowledge on how to make delicious pasta. Here, I plan to focus more on details and points that I couldn't explain in detail in the YouTube video. Let's decorate the house with a small Italian kitchen with me?
