Lotus root is part of the underground stem of the lotus flower and is a root vegetable that is in season from October to March of the following year. It has a crunchy texture and is used in a wide variety of dishes, including namul side dishes, simmered dishes, deep-fried foods, stir-fries, sauce, and lotus root tea.
The medicinal properties of lotus root are due to tannins, and because of its astringent properties, it heals wounds, has a hemostatic effect, and controls diarrhea and vomiting. Also, the joint part of the lotus root stops coughing. When you cut a lotus root, sticky mucus comes out. There is a component called mucin in such sticky parts. The mucin contained in lotus root is a substance that combines protein and sugar, and has the function of protecting cells. This sticky mucin helps digest protein and protects the stomach lining, so it is effective in cases of digestive dysfunction.
Instead of the complicated and difficult recipes up until now, we use a new cooking technology to present a new flavor with the crunchy texture of lotus root.
