1. The first Omakase experience is unforgettable. I don't think I've had that many experiences in life where the variety of flavors was so amazing. It may be as difficult as chefs who have accumulated years of experience, but I would like to give my acquaintances a similar experience through relatively low barriers through ways to understand various ingredients and bring out flavors.
2. It's good to learn more about the Shimae process, but I'm looking forward to more curriculums related to Tsumami. Sushi will be the main course, but when it drew expectations from Tsumami, the taste of sushi doubled, and most of all, the sweet Ankimo pickled in soy sauce was hard to taste unless it was Sushiya.
