However, it is true that it is burdensome to enjoy delicious sushi frequently. At the same time, finding the right course on how to make sushi won't be easy. Especially if it's at the level you want.

Hallo I'm Chef Koji, who started as a native of Japan's three-Michelin star “Kanda,” and currently runs 6 sushi omakase businesses in Seoul. I usually communicate with various sushi contents through the Koji TV YouTube channel, and I would like to let you know about “Sushi Omakase,” which has been requested a lot. Through this collaboration with Class 101, I would like to teach you step by step from the basics so that even those who have never tried Japanese food can cook sushi.


Enjoy the taste of authentic sushi

I'll show you the real way.

On the outside, sushi is simply a form of rice and fish attached to it, but the taste you feel when you put it in your mouth is anything but simple. Depending on how the ingredients are aged, how the rice is cooked and seasoned, and depending on the combination of shari (rice for sushi) and toppings (sushi ingredients), even sushi that starts with the same ingredients may have a different flavor at the end.


Therefore, in this class, we will discuss the core ingredients and the decisive factors that determine the taste, starting from the very basic sushi knowledge level. I didn't get it when I just looked at the recipe and followed it Once you learn how to embody the “taste of sushi,” you'll be able to enjoy sushi at home easily.


Step 1. About sushi and omakase

How much do you know about sushi? If you learn about the cuisine called sushi from its inception to the present, and how sushi is trending in the country called Korea, you will become a little more familiar with the food called sushi.

Step 2. Great material! How do you prepare, maintain, and mature?

Great food starts with great ingredients. This is especially true when it comes to sushi. In order to obtain good ingredients, I would like to show you all the processes in order, from how to choose fresh fish and seafood, how to transport and store them, and how to care for and age them according to the ingredients.


Of course, we'll also discuss how to handle ingredients easily through methods on how to handle Japanese food in this part.


Step 3. 80% of the flavor of sushi starts with rice.

Do you know this fact? In fact, most of the taste of sushi we feel depends on the taste we feel in rice, Therefore, tasty sushi always starts with good shari (rice for sushi). I'll share with you how to make sushi rice that's different from what we usually eat, and how to make shari (rice for sushi), which is the core flavor, to make shari (rice for sushi).


Step 4. Authentic sushi making

Once you've prepared all the ingredients (ingredients) and shari (rice), it's time to start making sushi in earnest. Taking into account the characteristics of each ingredient, I will vary the amount of rice and wasabi to make sushi with the most suitable size and balance for eating. For those who are familiar with nigirushi (a type of sushi), you will learn another type of sushi through mackerel bonzushi, a traditional form of sushi from the Kansai region of Japan. I'll make you feel confident about sushi by making various types of sushi yourself.

From the soup that everyone is familiar with when eating sushi, to the mouth-watering ikura (salmon roe dish), the rich flavor of angimo (monkfish liver dish), and gyoku (Japanese omelette dessert), which sweetly finishes the end of omakase In addition to sushi, we will also learn about side foods that make sushi stand out.

It is the finest root wasabi from Nagano Prefecture, Japan, which is said to be the home of wasabi. It has a soft yet fine texture and a pleasant, spicy flavor, and a deep flavor that cannot be found in commercially available wasabi.
